TIP 1. Filefish Jerky (Jwipo)

Stir-Fried Jwipo

  1. Slice the filefish jerky into strips (avoid slicing too thinly to prevent burning).
  2. Heat a frying pan with oil and stir-fry the sliced jerky. Set aside.
  3. In the same pan, stir-fry fish cakes, sliced chili peppers, and garlic slices. Set aside.
  4. In the pan, make a sauce by lightly simmering : 2 tablespoons of gochujang (Korean red pepper paste), a pinch of red pepper flakes, 1 tablespoon of corn syrup, ½ tablespoon of sugar, a dash of soy sauce, and sesame oil.
  5. Toss the cooked jwipo and fish cakes in the sauce until evenly coated.

Fried Jwipo

  1. Lightly moisten the jwipo with water and let it sit for 15–20 minutes.
  2. Pat off excess water and cut into desired sizes.
  3. Prepare a batter by mixing frying mix with water to a medium consistency.
  4. Deep-fry until crispy (just once is enough).
  5. Serve with mustard or sweet chili sauce.

Grilled Jwipo

  1. Lightly brush jwipo with olive oil or butter.
  2. Let it soften slightly at room temperature.
  3. Lightly oil a frying pan with olive oil or butter.
  4. Before the pan becomes too hot, grill the softened jwipo gently.
    (Tip: Keep the heat low and flip frequently to avoid burning.)

TIP 2. Pollock Jerky (Myeongtaepo)

Steamed Pollock Jerky

  1. Soak whole dried pollock (myeongtaepo) in water or rice-washed water for about 2 hours.
  2. Cut into bite-sized pieces.
  3. Steam in a steamer for about 20 minutes.
  4. Prepare a sauce with chopped green onions, sliced hot peppers, soy sauce, red pepper powder, cooking wine, and sugar.
  5. Coat the steamed pollock with the sauce.
  6. Top with extra chopped green onions and chili slices to finish.

Air Fryer Pollock Jerky

  1. Preheat the air fryer at 200°C (392°F) for about 4 minutes and 30 seconds.
  2. Place the whole dried pollock in the preheated air fryer and heat at 200°C for 4 minutes.
  3. Enjoy tender, delicious pollock jerky!

TIP 3. Fried Snacks

  1. To restore crispiness, cook in an air fryer at 150–160°C (302–320°F).
    If preheated: cook for about 3 minutes.
    If not preheated: cook for about 5 minutes.
  2. For added flavor, serve with mayonnaise or your favorite dipping sauce.
  3. Best enjoyed with alcoholic beverages.
